Gourmet restaurant in the Vosges
Améthyste is the heart of La Cabane du Breuil. Our chalet's restaurant is located in the vast kitchen where Chef Christophe Poirot works at his imposing stove.
Only 12 guests are invited to take a seat around the U-shaped table, a shape that allows everyone to fully enjoy the spectacle of the Chef who cooks a tailor-made gastronomic menu every evening in 7 stages, a voluntary walk through the region sprinkled with original touches.

With more than 25 years of experience in catering, including more than 10 years at the renowned “Table d’Angèle”, Christophe strives to put into practice the values that have always been his: generosity, simplicity, sincerity. Added to this is the authenticity, that of products whose provenance is always carefully selected.
In perfect alchemy, hay, fir, local herbs and vegetables enhanced with juice, spices, citrus fruits... come to play counterpoints so that a cuisine of emotions and sensations arrives on the plates.
The dinner takes place in the form of a discovery menu of six or seven courses, which can be offered in combination with food and wine and which is frequently renewed in faithful reflection of the seasons.
The desserts also interpret this score of subtle alliances: seasonal fruits accompanied by original homemade sorbets (fennel, La Bresse sheep's yogurt, spruce, etc.), gourmet variations such as chocolate enhanced by an ice cream made from an infusion of grape shavings. drink in milk, a flan tart accompanied by chartreuse ice cream…
As chef favoring spontaneous cuisine, Christophe Poirot makes desserts “à la minute” combining play on textures, juices, sauces, roasted fruits, aromatic herbs, wild flowers according to the seasons.

With an inspiration that enhances the modesty of the products with gastronomic know-how of the highest precision, a meal at the Table is in itself a unique culinary experience.
Christophe Poirot works with meats and fish to express their quintessence, which he energizes with virtuoso full-bodied juices and tangy gels. Each plate is an elegant composition, a feast for the eyes with gourmet scents.
But what makes a dinner at La Table such an exceptional and atypical moment is the atmosphere of the place, where the omnipresence of burnt wood in the decoration highlights the beautiful Corten steel counter.
Simplicity is the key in this warm room where guests will choose their own wine, compose their cheese plate, and experience their dinner as a moment of shared discovery around the large counter.
In fine weather, meals are taken on the sheltered terrace, in the purity of the Vosges air, facing the marvelous surrounding panorama.
